Anzac Biscuits Recipe

Ingredients
- 1 cup plain flour
- 1 cup rolled oats
- 1 cup desiccated coconut
- 3/4 cup brown sugar
- 125g butter
- 2 tablespoons golden syrup
- 1 teaspoon bicarb soda
- 2 tablespoons boiling water
Instructions
- Preheat your oven to 160°C or 320°F.
- In a large mixing bowl, combine flour, oats, coconut and brown sugar.
- Melt butter in a saucepan over low heat. Once melted, add golden syrup and stir until combined.
- In a small bowl, combine bicarb soda and boiling water. Add to the butter mixture and stir. It should bubble up a little.
- Pour the wet ingredients into the dry mixture and stir until well combined.
- Roll the mixture into tablespoon-size balls and place them on a lined baking tray. Flatten the balls slightly with a fork.
- Bake for 18 to 20 minutes or until golden brown.
- Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Anzac Macadamia Creams Recipe

Ingredients
- 1/2 cup rolled oats
- 1/2 cup macadamias, roughly chopped
- 1/2 cup desiccated coconut
- 1/2 cup almond meal
- 1/4 teaspoon sea salt
- 1/4 cup rice malt syrup
- 1/4 cup coconut oil
Instructions
- Preheat your oven to 150°C or 300°F.
- In a large mixing bowl, combine oats, macadamias, coconut, almond meal and sea salt.
- In a saucepan over low heat, melt rice malt syrup and coconut oil together and mix.
- Add the wet mixture to the dry mixture and mix until well combined.
- Using a tablespoon, drop rounded balls onto a lined baking tray and flatten slightly with a fork.
- Bake for 15-20 minutes or until golden.
- Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
