If there is one thing that brings me back home, it's the smell of Anzac biscuits baking in the oven. There's just something special about the sweet buttery aroma with a hint of golden syrup filling the air, that just makes me feel all warm and fuzzy inside. So today, I'm going to share with you my favorite Anzac biscuit recipe that creates the perfect chewy texture that we all know and love.

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup desiccated coconut
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, cubed
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Method:

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine oats, flour, coconut, and brown sugar.
  3. In a small saucepan, melt the butter and golden syrup together over low heat.
  4. Dissolve baking soda in boiling water, then add to the butter mixture and stir well.
  5. Add the melted butter mixture to the dry ingredients and mix until well combined.
  6. Using your hands, roll the mixture into small balls and place onto the prepared baking sheets, pressing down lightly on each ball with a fork.
  7. Bake for 12-15 minutes until golden brown.
  8. Cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
