Today, we're sharing with you a recipe for Anzac biscuits, a beloved Australian treat that was originally created during World War I to send to troops overseas. These crispy yet chewy cookies are easy to make and perfect for an afternoon snack or dessert.
Ingredients:
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup desiccated coconut
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 125g butter
- 2 tablespoons golden syrup
- 1/2 teaspoon bicarbonate of soda
- 2 tablespoons boiling water
Instructions:
- Preheat your oven to 160°C (fan-forced) and line a baking tray with baking paper.
- In a large mixing bowl, combine the rolled oats, plain flour, desiccated coconut, brown sugar, and white sugar.
- Melt the butter and golden syrup together in a small saucepan over low heat.
- Dissolve the bicarbonate of soda in the boiling water and add to the melted butter mixture.
- Pour the butter mixture into the dry ingredients and mix well until all the ingredients are combined.
- Roll tablespoonfuls of the mixture into balls and place onto the prepared baking tray, leaving room for each biscuit to spread.
- Bake for 12-15 minutes, or until the biscuits are golden brown.
- Remove the biscuits from the oven and allow them to cool on the tray for 5 minutes.
- Transfer the biscuits to a wire rack to cool completely.
