What's up y'all? Today, I got a bomb gluten-free Anzac biscuits recipe to share with y'all. These biscuits are perfect for those who's gluten intolerant or just trying to switch up their regular biscuit recipe.

Gluten Free Anzac Biscuits

Gluten Free Anzac Biscuits

Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup almond meal
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup butter, melted
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 2 tbsp. boiling water

Instructions

  1. Preheat your oven to 325°F.
  2. In a large bowl, mix together the oats, coconut, almond meal, and brown sugar.
  3. In a small saucepan, melt the butter and honey together.
  4. In a separate bowl, dissolve the baking soda in boiling water.
  5. Add the melted butter and honey, vanilla extract, and baking soda mixture to the dry ingredients and stir until well combined.
  6. Scoop out spoonfuls of the mixture and roll them into balls. Place them on a baking tray lined with parchment paper and flatten them slightly.
  7. Bake for 15-20 minutes or until they turn golden brown.
  8. Let your biscuits cool on the tray for a few minutes before transferring them to a wire rack.

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup desiccated coconut
  • 3/4 cup caster sugar
  • 125g butter
  • 1 tbsp. golden syrup
  • 1/2 tsp. bicarbonate of soda
  • 2 tbsp. boiling water

Instructions

  1. Preheat your oven to 160°C (fan-forced).
  2. Mix together the oats, flour, coconut, and sugar in a large bowl.
  3. In a small saucepan, melt the butter with the golden syrup.
  4. In a separate bowl, dissolve the bicarbonate of soda in boiling water and add it to your butter mixture.
  5. Add your butter mixture to the dry ingredients and stir until well combined.
  6. Scoop out spoonfuls of the mixture and roll them into balls. Place them on a lined baking tray and flatten them slightly.
  7. Bake for 18-20 minutes or until they turn golden brown.
  8. Let your biscuits cool on the tray for a few minutes before transferring them to a wire rack.

  5. Add your coconut oil mixture to the dry ingredients and stir until well combined.
  6. Scoop out spoonfuls of the mixture and roll them into balls. Place them on a lined baking tray and flatten them slightly.
  7. Bake for 18-20 minutes or until they turn golden brown.
  8. Let your biscuits cool on the tray for a few minutes before transferring them to a wire rack.
