Ingredients:

  • 1 cup of plain flour
  • 1 cup of white sugar
  • 1/2 cup of desiccated coconut
  • 125 grams of butter
  • 2 tablespoons of golden syrup
  • 1 teaspoon of bicarbonate of soda
  • 2 tablespoons of boiling water

Once you have gathered all your ingredients, it's time to start baking!

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Mix together the rolled oats, plain flour, sugar, and coconut in a bowl.
  3. Melt the butter and golden syrup together in a saucepan over low heat.
  4. Dissolve the bicarbonate of soda in boiling water and add to the melted butter mixture, stirring well.
  5. Pour the melted butter mixture into the bowl with the dry ingredients, and mix thoroughly until everything is well combined.
  6. Take teaspoonfuls of the mixture and roll into balls. Place these onto a greased baking tray, allowing some space between each ball.
  7. Bake for 18-20 minutes, or until golden brown.
  8. Transfer to a wire rack to cool completely.

Now that you've got your Anzac Biscuits baking, you can sit back and enjoy some fascinating history surrounding this classic Aussie snack. Did you know that Anzac Biscuits were first made by wives and mothers of Australian soldiers during World War I? They were sent to the soldiers on the front line as a tasty, long-lasting treat that would stay fresh during the long journey.

The original recipe for Anzac Biscuits did not contain eggs, as these were in short supply during the war. Instead, the combination of golden syrup and bicarbonate of soda was used to bind the ingredients together. This also gave the biscuits a unique flavour that has stood the test of time.

As well as being a delicious treat, Anzac Biscuits are still an important symbol of remembrance for many Australians and New Zealanders. Every year on 25th April, we come together to honour the sacrifices made by our brave ANZAC troops.
