Anzac Biscuits
Ingredients:
- 1 cup (90g) rolled oats
- 1 cup (125g) plain flour
- 2/3 cup (150g) granulated sugar
- 3/4 cup (60g) desiccated coconut
- 1/4 teaspoon salt
- 1/2 cup (125g) unsalted butter
- 2 tablespoons (40g) golden syrup
- 1 teaspoon (5g) baking soda
- 2 tablespoons (30ml) boiling water
Method:
- Preheat oven to 320°F (160°C). Line a baking tray with parchment paper.
- In a large bowl, mix together the oats, flour, sugar, coconut and salt.
- In a small saucepan, melt together the butter and golden syrup.
- Mix the baking soda with boiling water in a small bowl, then stir into the butter mixture.
- Add the butter mixture to the dry ingredients and stir until well combined.
- Roll tablespoons of dough into balls and place onto the prepared baking tray, leaving about 2 inches (5cm) between each biscuit.
- Bake in preheated oven for 18-20 minutes or until golden brown.
- Remove from oven and allow to cool on tray for 10 minutes before transferring to a wire rack to cool completely.
Chewy or Crispy?
