Ingredients:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 stick (1/2 cup) unsalted butter, cut into pieces
  • 1/4 cup honey
  • 1 tsp baking soda
  • 2 tbsp boiling water

Instructions:

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large bowl, whisk together flour, oats, coconut, sugar, and salt.
  3. In a medium saucepan, melt butter and honey over medium heat, stirring until butter is melted.
  4. In a small bowl, dissolve baking soda in boiling water. Add to butter mixture and stir.
  5. Pour butter mixture into dry ingredients and mix well.
  6. Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets.
  7. Bake for 10-12 minutes, until cookies are golden brown.
  8. Cool on baking sheets for 5 minutes, then transfer to wire rack to cool completely.
