ANZAC Biscuits (Image 1)
Ingredients:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 stick (1/2 cup) unsalted butter, cut into pieces
- 1/4 cup honey
- 1 tsp baking soda
- 2 tbsp boiling water
Instructions:
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
- In a large bowl, whisk together flour, oats, coconut, sugar, and salt.
- In a medium saucepan, melt butter and honey over medium heat, stirring until butter is melted.
- In a small bowl, dissolve baking soda in boiling water. Add to butter mixture and stir.
- Pour butter mixture into dry ingredients and mix well.
- Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets.
- Bake for 10-12 minutes, until cookies are golden brown.
