  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) unsalted butter, cubed
  • 1/4 cup (80g) golden syrup
  • 1/2 tsp. baking soda
  • 1 tbsp. boiling water

Instructions:

  1. In a large mixing bowl, combine the flour, oats, and sugar.
  2. In a saucepan, melt the butter and golden syrup over low heat.
  3. In a separate bowl, dissolve the baking soda in the boiling water.
  4. Add the baking soda mixture to the butter mixture and stir until combined - it should foam up a bit!
  5. Pour the butter mixture over the dry ingredients and stir until everything is well combined.
  6. Roll the mixture into tablespoon-sized balls and place onto the lined baking tray, leaving room in-between for spreading.
  7. Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown.
  8. Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

  3. In a separate bowl, mix together the melted butter and golden syrup.
