Anzac Cookies - Biscuiti Anzac
Ingredients:
- 1 cup (150g) all-purpose flour
- 1 cup (90g) rolled oats
- 3/4 cup (150g) granulated sugar
- 1/2 cup (115g) unsalted butter, cubed
- 1/4 cup (80g) golden syrup
- 1/2 tsp. baking soda
- 1 tbsp. boiling water
Instructions:
- In a large mixing bowl, combine the flour, oats, and sugar.
- In a saucepan, melt the butter and golden syrup over low heat.
- In a separate bowl, dissolve the baking soda in the boiling water.
- Add the baking soda mixture to the butter mixture and stir until combined - it should foam up a bit!
- Pour the butter mixture over the dry ingredients and stir until everything is well combined.
- Roll the mixture into tablespoon-sized balls and place onto the lined baking tray, leaving room in-between for spreading.
- Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown.
- Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

- 1 tsp. baking soda
- 2 tbsp. boiling water
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the oats, coconut, brown sugar, and flour.
- In a separate bowl, mix together the melted butter and golden syrup.
- In a small bowl, dissolve the baking soda in the boiling water.
- Add the baking soda mixture to the butter mixture and stir to combine.
- Pour the butter mixture into the dry ingredients and stir until everything is well combined.
- Roll the mixture into balls and place them onto the lined baking tray, leaving room for spreading.
- Bake for approximately 15-20 minutes or until the cookies are golden brown.
- Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
