As I was scrolling through my social media feed, a picture caught my eye! It was a picture of delicious Crunchy Anzac Biscuits! I couldn't help but think about how amazing they would taste! I decided to bring a bit of Aussie culture to my kitchen and make them myself. Now, I know what you're thinking, "How are you going to make Anzac Biscuits? Aren't they an Aussie tradition?" But trust me, I found a recipe that's easy to follow and will make even the Aussies envious of my baking skills. To start, preheat your oven to 170C and line a baking tray with parchment paper. Then, get all of your ingredients together. You'll need 1 cup rolled oats, 1 cup plain flour, 1 cup caster sugar, 3/4 cup desiccated coconut, 1/2 cup unsalted butter, 2 tbsp golden syrup, 1 tsp bicarbonate of soda, and 2 tbsp boiling water. Firstly, you want to mix your oats, flour, sugar, and coconut together in a bowl. Then, you want to heat up your butter and golden syrup in a pot until it's melted. Dissolve your bicarbonate of soda in boiling water and add it to the pot. You should see the mixture start to foam up. Next, add your melted butter mixture to your dry ingredients and mix well. Once everything is combined, roll the mixture into balls and place them on your lined baking tray. Don't worry if they're a bit sticky, they'll dry out as they bake. Pop the tray in the oven for 12-15 minutes until the biscuits turn a lovely golden brown color. Once they're out of the oven, let them cool on a wire rack for at least 10 minutes. Trust me, it's worth the wait. Can you smell that? The sweet aroma of freshly baked Anzac Biscuits wafting through your kitchen. Now, the real question is, how do they taste? They are absolutely delicious! The combination of the crunchy oats, sweet golden syrup and the coconut make these biscuits perfect for a nice snack with your cup of tea. I highly recommend you try this recipe out, especially if you're an Aussie living abroad and you're feeling a bit homesick. It'll definitely bring you a bit of comfort.
