  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water
Instructions:
  1. Preheat your oven to 160°C and line a baking tray with grease-proof paper.
  2. Mix together the oats, flour, coconut and sugar in a large bowl.
  3. Melt butter and golden syrup together in a saucepan over low heat.
  4. Dissolve the bicarbonate of soda in boiling water and add to the melted butter and golden syrup.
  5. Pour the melted mixture into the dry ingredients and stir until well combined.
  6. Roll mixture into small balls and flatten slightly with the palm of your hand.
  7. Bake for 12-15 minutes or until golden brown.
  8. Remove from oven and cool on a wire rack.
