Traditional ANZAC Biscuits

Ingredients:

  • 1 cup of rolled oats
  • 1 cup of plain flour
  • 1 cup of caster sugar
  • 3/4 cup of desiccated coconut
  • 125g of butter
  • 2 tablespoons of golden syrup
  • 1 teaspoon of bicarbonate of soda
  • 2 tablespoons of boiling water

Instructions:

  1. Preheat your oven to 160°C / 140°C fan.
  2. In a large bowl, mix together the rolled oats, flour, caster sugar, and desiccated coconut.
  3. In a small saucepan, melt the butter and golden syrup together over low heat.
  4. In a separate bowl, mix the bicarbonate of soda with boiling water and add to the butter and golden syrup mixture. Mix well.
  5. Add the liquid mixture to the dry ingredients and mix well.
  6. Using clean hands, roll tablespoons of the mixture into balls and place on a lined baking tray.
  7. Flatten the balls slightly with a fork.
  8. Bake in the oven for 12-15 minutes or until golden brown.
  9. Remove from the oven and allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
