Ingredients:

  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1 cup plain flour
  • 1 cup caster sugar
  • 125g unsalted butter, chopped
  • 2 tbsp golden syrup
  • 1 tsp bicarbonate of soda
  • 2 tbsp boiling water

Preheat your oven to 160°C (fan-forced) and line a baking tray with baking paper.

Instructions:

  1. In a large bowl, mix together the rolled oats, desiccated coconut, plain flour, and caster sugar.
  2. In a small saucepan, melt the butter and golden syrup together over low heat.
  3. In a small bowl, mix the bicarbonate of soda and boiling water together, then add to the butter mixture.
  4. Add the butter mixture to the dry ingredients and mix well.
  5. Scoop tablespoonfuls of the mixture onto the baking tray and flatten slightly with a fork.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Allow to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
