  • 2 tablespoons boiling water

Instructions:

  1. Preheat your oven to 180°C.
  2. In a large bowl, combine the rolled oats, flour, coconut, and both sugars.
  3. In a separate bowl, mix together the melted butter and golden syrup.
  4. In a small dish, whisk together the baking soda and boiling water, then add it to the butter mixture.
  5. Add the wet ingredients to the dry ingredients, and mix until well combined.
  6. Scoop tablespoon-sized portions of the mixture onto a lined baking sheet, leaving some space in between each biscuit for them to spread out.
  7. Bake for 12-15 minutes, or until golden brown.
  8. Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Store in an airtight container for up to a week (if they last that long!)
