Cinnamon Anzac Biscuits
- 1 cup rolled oats
- 1 cup plain flour
- 1/2 cup caster sugar
- 1/2 cup desiccated coconut
- 2 tsp ground cinnamon
- 150g butter
- 2 tbsp golden syrup
- 1/2 tsp bicarbonate of soda
- Preheat oven to 160°C. Line 2 baking trays with baking paper.
- Mix the oats, flour, sugar, coconut and cinnamon together in a large bowl.
- Melt the butter and golden syrup together in a medium saucepan over low heat.
- Add the bicarbonate of soda to the butter mixture and stir until it froths.
- Stir the butter mixture into the oat mixture until well combined.
- Roll tablespoonfuls of mixture into balls, and then flatten slightly to make biscuits. Place on the prepared trays.
