Anzac Biscuits Recipe
Ingredients:
- 1 cup plain flour
- 1 cup rolled oats
- 1 cup desiccated coconut
- 3/4 cup caster sugar
- 125g unsalted butter, chopped
- 2 tbsp golden syrup
- 1 tsp bicarbonate of soda
- 2 tbsp boiling water
Instructions:
- Preheat the oven to 160°C.
- Line a baking tray with baking paper.
- In a mixing bowl, combine the flour, oats, coconut, and caster sugar.
- In a small saucepan, melt the butter and golden syrup over low heat.
- Mix the bicarbonate of soda with boiling water and stir into the butter mixture. It will froth up.
- Add this frothy mixture to the dry ingredients and stir to combine.
- Take tablespoonfuls of the mixture and roll into balls. Place the balls on the lined baking tray leaving room to spread. Flatten each ball slightly with the back of your spoon.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Allow the biscuits to cool on the tray for 5 minutes then transfer to a wire rack to cool completely.

- 1/2 cup brown sugar
- 150g unsalted butter, melted
- 2 tbsp golden syrup
- 1 tsp baking soda
- 3 tbsp boiling water
Instructions:
- Preheat the oven to 180°C.
- Line 2 baking trays with baking paper.
- In a mixing bowl, combine the flour, oats, coconut, and both sugars.
- In a small saucepan, melt the butter and golden syrup over low heat.
- In a small bowl, dissolve the baking soda in the boiling water. Add this to the melting butter mixture and stir well.
- Add the butter mixture to the dry ingredients and mix well.
- Take tablespoonfuls of the mixture and roll into balls. Place the balls on the lined baking trays leaving room to spread. Flatten each ball slightly with the back of your spoon.
- Bake in the preheated oven for 12-15 minutes or until golden brown. Swap the trays around halfway through cooking.
- Allow the biscuits to cool on the tray for 5 minutes then transfer to a wire rack to cool completely.
