Anzac Biscuits

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond meal
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut sugar
  • 1/2 tsp. baking soda
  • 1/4 cup coconut oil, melted
  • 2 tbsp. pure maple syrup
  • 1 tbsp. water

Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, mix together the rolled oats, almond meal, desiccated coconut, coconut sugar, and baking soda.
  3. In another mixing bowl, whisk together the melted coconut oil, pure maple syrup, and water.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Scoop out the mixture into twelve equally sized cookies. Flatten them down to about 1/2 an inch thick.
  6. Bake for 15-20 minutes or until golden brown.
  7. Remove from oven and cool on the baking sheet for 5 minutes.
  8. Transfer the biscuits to a wire rack and cool completely.
  9. Store in an airtight container at room temperature for up to five days.
