Ingredients:

- 125g unsalted butter
- 2 tablespoons of golden syrup
- 1/2 teaspoon of bicarbonate of soda
- 2 tablespoons of hot water
Directions:
- Preheat your oven to 160°C
- Mix the oats, flour, sugar, and coconut together in a large bowl and set aside
- Over low heat, melt the butter and golden syrup together in a small saucepan
- In a separate small bowl, mix the bicarbonate of soda with hot water and add it to the butter mixture
- Add the butter mixture to the dry ingredients and mix well
- Spoon the mixture onto a baking tray lined with baking paper
- Bake for 15-20 minutes, or until golden brown
- Let the biscuits cool on the tray for 5 minutes, then transfer to a wire rack to cool completely
