Happy Anzac Day, everyone! Today, I'm sharing with you the recipe for the traditional and oh-so-delicious Anzac biscuits. These cookies have a rich history and are a staple in many Australian households.

Original Anzac Biscuit Recipe 1915

Anzac Biscuits

Ingredients:

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup sugar
  • 3/4 cup desiccated coconut
  • 125g unsalted butter, chopped
  • 2 tbsp golden syrup
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp boiling water

Instructions:

  1. Preheat oven to 160°C.
  2. Combine oats, flour, sugar and coconut in a bowl.
  3. Combine butter and golden syrup in a saucepan over low heat; cook until butter melts.
  4. Combine bicarbonate of soda and water in a small bowl; stir into butter mixture.
  5. Add butter mixture to oat mixture; stir well to combine.
  6. Roll level tablespoons of mixture into balls. Place balls, 5cm apart, on baking trays lined with baking paper. Flatten slightly with a fork.
  7. Bake for 15 to 18 minutes or until light golden. Allow to cool on trays for 5 minutes; transfer to a wire rack to cool completely.

Add 1/4 cup cocoa powder to the dry ingredients and top with a melted chocolate drizzle once cooled.
