Making Anzac Biscuits

First off, let me tell you what ya need to make these delicious little treats! Before you start, preheat your oven to 180°C (or 160°C fan forced).

Ingredients:

  • 1 cup (150g) plain flour, sifted
  • 1 cup (90g) rolled oats
  • 1 cup (85g) desiccated coconut
  • 1/2 cup (110g) caster sugar
  • 125g unsalted butter, chopped
  • 2 tablespoons golden syrup
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water

Now let's get started on these Anzac Biscuits!

Instructions:

  1. Combine the flour, oats, coconut and sugar in a large bowl.
  2. Melt the butter and golden syrup together in a small saucepan.
  3. Dissolve the bicarbonate of soda in the boiling water and add to the butter mixture.
  4. Pour the butter mixture into the dry ingredients and mix well.
  5. Roll tablespoons of mixture into balls and place on baking trays lined with non-stick baking paper. Flatten them down just a little!
  6. Bake for 18-20 minutes or until golden brown. Cool on wire racks when they are finished.

And that's it! Your Anzac Biscuits are now ready to serve and enjoy. Y'all can store 'em in an airtight container for up to 5 days.
