ANZAC biscuits are a delicious and easy treat that are perfect with a cup of tea or coffee. They have a slightly chewy texture and a sweet, buttery taste that makes them hard to resist. Here's how to make them:

Ingredients:

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 3/4 cup caster sugar
  • 125g butter, chopped
  • 2 tablespoons golden syrup
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water

Instructions:

  1. Preheat oven to 160°C. Line 2 baking trays with baking paper.
  2. In a large bowl, combine flour, oats, coconut and sugar.
  3. In a small saucepan, stir butter and golden syrup over low heat until melted.
  4. In a separate small bowl, combine bicarbonate of soda and water.
  5. Add bicarbonate of soda mixture to butter mixture and stir until frothy.
  6. Pour butter mixture over dry ingredients and use a wooden spoon to stir until well combined.
  7. Roll tablespoons of mixture into balls and place on prepared trays, allowing room for spreading.
  8. Press biscuits down slightly with a fork.
  9. Bake for 10-12 minutes or until golden brown.
  10. Cool on tray for 5 minutes then transfer to a wire rack to cool completely.

These biscuits have a special place in Australian and New Zealand history. They were first made by the wives and mothers of Australian and New Zealand soldiers during World War I. The biscuits were sent to the soldiers as they were long-lasting and could be easily transported. The name “ANZAC” stands for Australian and New Zealand Army Corps.
