Today, I want to share with you a recipe that holds a special place in my heart, Anzac biscuits. Anzac Day is an important day for me to commemorate and honor the service and sacrifice of the Australian and New Zealand Army Corps, and baking Anzac biscuits is a way for me to show my respect. Let's get started on making these delicious biscuits. For this recipe, you will need: Ingredients: - 1 cup of rolled oats - 1 cup of plain flour - 1 cup of desiccated coconut - 1/2 cup of caster sugar - 1/2 cup of brown sugar - 125g of butter - 2 tablespoons of golden syrup - 1/2 teaspoon of bicarbonate of soda - 1 tablespoon of hot water Instructions: 1. Preheat your oven to 160°C (320F) if fan-forced or 180°C (356°F) otherwise. 2. In a large bowl, mix the rolled oats, flour, desiccated coconut, caster sugar, and brown sugar together. 3. In a small saucepan, melt the butter and golden syrup over medium heat. Once melted, add the bicarbonate of soda and hot water and stir well. 4. Pour the butter mixture into the dry ingredients and mix well. 5. Roll the mixture into balls, around tablespoon-sized, and place on a baking tray lined with baking paper. Flatten slightly with a fork. 6. Bake for 12-15 minutes or until golden brown. 7. Let the biscuits cool on the tray for a few minutes before transferring onto a wire rack to cool completely. Now that we have made our Anzac biscuits let's discuss the history behind this recipe. Anzac biscuits were originally made during World War I by wives and women's groups who sent them to their loved ones fighting overseas. These biscuits were unique because they could survive the long journey overseas due to their hardiness and long-lasting ingredients. As the wives and women's groups did not have much to work with, they used ingredients such as golden syrup instead of eggs, as eggs were in short supply. This resulted in a sweet and chewy biscuit that was perfect for sending to the soldiers. As I gaze at the perfectly golden biscuits cooling on my countertop, I cannot help but feel grateful to those women who came before us. They used their ingenuity and resourcefulness to create something so special that has now become a symbol of remembrance and tribute to our brave soldiers. I hope this recipe has brought a little bit of history and remembrance into your life. Please enjoy these delicious Anzac biscuits, and let us never forget the sacrifices of the Australian and New Zealand Army Corps. Lest we forget.
